Gluten Free Pancakes

When I first found out I couldn’t eat gluten or dairy I really missed pancakes. I tried and tried many recipes and they were either not very nice or too difficult to make. These aren’t paleo as they do contain gluten free flour but they are perfect for those who are gluten free and still want to enjoy pancakes that actually taste good.

Pancake Ingredients

  • ¼ cup almond meal

  • ¼ cup GF SR flour

  • 1 tablespoon coconut sugar

  • 1 egg

  • Enough coconut milk to form the right consistency

Pancake Method

  1. Mix all ingredients together.

  2. Pre heat a fry pan, make sure you spray the pan with oil to avoid the pancakes from sticking.

  3. Start cooking, this recipe makes 4 pancakes

Topping Ingredients

  • 1 teaspoon of ABC butter

  • 1 teaspoon cacao

  • 1 teaspoon of rice malt syrup

  • 1 teaspoon of coconut milk

Topping Method

  1. Mix the above ingredients together.

  2. Spread on the pancakes.

  3. Top with fresh strawberries.
