Nourishing Minestrone Soup 

If you are looking for the perfect winter warmer, look no further. This soup is packed with ingredients that will leave you feeling amazing. It is hands down, one of my favourites to make and freeze during the colder months.

Ingredients:

  • ½ cup cauliflower

  • ½ cup Broccoli

  • 1 carrot

  • 1 zucchini

  • ½ cup chopped kale

  • 1 stick of celery

  • 1 cup sweet potato

  • ½ cup of pumpkin

  • 4 rashes of short cut bacon

  • 1 litre of stock/bone broth

  • 400 gram tin of chopped tomato’s (always try and find one that is just tomato’s)

  • 1 cup of cooked quinoa

  • Spinach (to serve)

  • Parsley (to serve)

(I haven’t added garlic or onion as I’m keeping in low fod map but you can add if you want)

Method:

  1. Pre-heat your stock pot

  2. Finely chop your bacon and fry in the pot in a little olive oil

  3. Add all the vegetables apart from the kale to the pot and then add the stock

  4. Allow to simmer on a medium to low heat for 25 minuet or until vegetables are cooked.

  5. Once vegetables are cooked add the quinoa and kale

  6. Place a small handful of spinach in each bowl and spoon soup on to the top

  7. Serve with freshly chopped parsley or your favorite herbs and season with salt and pepper
